EasyPeasie Omelet Recipe

Mix eggs, EasyPeasie (Natural or Green) Blend, and seasonings together, then cook as usual! Two tablespoons of EasyPeasie are equivalent to one whole cup of fresh vegetables.

Ingredients:

  • 3 large eggs
  • 2 tablespoons EasyPeasie Natural or Green Blend
  • 1/4 cup diced bell peppers (red, green, or yellow)
  • 1/4 cup diced onions
  • 1/4 cup grated cheese (cheddar, feta, or your choice)
  • 1 tablespoon milk or water
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter for cooking
  • Optional: diced tomatoes, spinach, mushrooms, or other preferred fillings

Instructions:

  1. Prepare Ingredients: Dice the bell peppers and onions. Grate the cheese and set aside. If using other fillings, prepare them as well.
  2. Whisk Eggs: In a mixing bowl, crack the eggs and add milk or water. Whisk until well combined.
  3. Add EasyPeasie: To the whisked eggs, add the EasyPeasie Natural Blend. Mix well to ensure it's evenly distributed.
  4. Season: Add salt and pepper to the egg mixture and whisk again.
  5. Cook Veggies: In a non-stick skillet, heat olive oil or butter over medium heat. Add the diced onions and bell peppers. Sauté until the onions are translucent and the peppers are slightly soft. If using other veggies, add them now and sauté.
  6. Pour Eggs: Once the veggies are cooked, spread them evenly across the skillet. Pour the egg mixture over the veggies, ensuring an even distribution.
  7. Add Cheese: Once the edges of the omelet start to set, sprinkle the grated cheese over one half of the omelet.
  8. Fold and Serve: Once the omelet is fully set but still moist in the middle, use a spatula to fold it in half. Cook for an additional minute, then gently slide the omelet onto a plate.
